Only Sense Online
Yun is a novice MMO player who equipped only unpopular skills labelled as garbage. However, soon after the official launch of the game, the NPC stopped to sell Recovery Potion. Everyone finally started to notice the importance of Support Magic and Items. And that spells trouble for Yun as well as all the support-based players. They received orders for recovery potion from endless flood of players en masse, some more aggressive players even go as far as forcing the support players to be their personal craftsman. In order to prevent this from going out of hands, all the support players grouped together to form a community to keep things in order.
So far JNC is the only English Publisher I can think of that has licensed pure MMO light novels, where characters just play the game either for fun or some other reason and they can always go back to real life. I would really like to see these kinds of stories, fun, light-hearted, easy-to-read LN.

Pretty much instead of leveling up like normal and picking classes or stat points, players acquire what are called Senses which are essentially skills. Each player can equip up to 10 Senses at one time to build their own classes which is the hook of the game.
If you want to be a mage, you'll need to pick up some specific senses that work together to let you do that. But with those same senses, you can augment other play styles as well. Each time to level up a Sense (using it while it's equipped) to around 10, you get Sense Points which can be used to buy new Senses. The Senses can be equipped and unequipped at will meaning you can end up playing as like 3 different builds depending on your mood. (The protagonist in Only Sense Online plays as a Potion Maker and Archer but equips different Senses depending on what they're doing.)
Only Sense Online is the only VRMMO series where I feel like I'd actually want to play the game. There's no sense of intelligent life being lost or evil plots. It's just a relaxing VRMMO with seasonal events, raids, simple quests, and a variety of play-styles that the game lets you enjoy.

How long are the volumes? Seems like something I’d love in small doses but might find a slog if they get super long.

This is one of my favorite series. The setting is a straight VRMMO setting where the protagonist plays the game Only Sense Online with a female avatar due to a sensor mistake. It's mostly slice of life and playing as Yun (protagonist) spends his time experimenting and doing his own thing. Most of his adventures in the story are through getting recruited by either his sister or his friends. He mains as an archer and crafter making potions. The story is really good at making all his potion brewing really interesting and he develops various types and sells them. It's a very relaxing series to read because none of the conflicts in the series are truly detrimental to life as it's truly just a game. There are jokes about the NPCs potentially being staff, but they're kept out of sight enough to leave them feeling like NPCs.
So overall, it's a game. The world-building is really well done as the game's system is explored in depth. You select skills to equip and can raise them and mix them however you want creating your "only" character build. The skills can evolve, split off, or even merge into new ones which creates and infinite number of player builds and styles. Overall, I'd much rather play something like Only Sense Online than stuff like Infinite Dendrogram, Sword Art Online, or Eldar Tales (Log Horizon).
Otherwise, you mentioned that J-NC is the only publisher to have a pure VRMMO series, but YP recently got Do You Like Your Mom?.

is that an Isekai though? if it is a Pure VRMMO then I suppose you are right, though Yen On has SAO Alt: GGO so I guess either way JNC is not the only one to have Pure MMO type of LN.

I've checked out the manga for this one and read also a bit of the fan translation. I would be certainly interested in it if it gets picked up officially.

Been reading the fan translation of this, and it's remarkably good.
It feels kinda like if Ray from Dendro were less a boss-killing badass and more a crafter character. It's really good. The 'ha, it's a guy with a girl avatar!' jokes get old, but it doesn't get squicky, so.
