The LN advertises itself as a realistic story but dives off into nonsense almost immediately. Since time is accelerated by 144 times while in the dungeon this means the MC is eating 432 meals (breakfast, lunch, and dinner) every surface day! This does not even take into account the amount of water he is drinking. I don't believe any emergency food supplier(s) would be able to supply this amount of food for very long to a common citizen before running out of stock, also he would need to buy and take delivery of said food and water at his place everyday. Plus, as the crises grows, it would be nearly impossible for him to keep buying such large amounts of supplies, since other people would be trying to stock up as well. Only the government could supply Dungeon Busters with the supplies they would need, thus making them a government agency, answerable to the government and not an independent company. The MC would lose control of his company and what happens very quickly.

It's story about how every single country except Japan can't do anything and experience nation-wide brain death and are awestruck with mighty Japan. It has nothing to do with realism, and all with author political beliefs crafted from playing Hearts of Iron. In single player with low AI settings.As for your question water is not such huge deal since let's say he needs around 4 litres of water per day. With 144 days in dungeon it's only 576 litres per day outside, or 17280l ors 17,3 cubic meters per month.
In comparison average usage of water per capita per DAY in Japan is 314 litres (mlit.go . jp), and in "Monthly Water Use in Tokyo by Size of Household, 2012" it's written that household of 4 people use around 25 cubic meters (more people = less usage per capita).
So as long he drinks normal water from tap using 144literes more to drink is not such huge problem. It's like adding 1 or 2 people to household.
As for food that would be harder to do when more people starts going to dungeons. But as for single person? I doubt in any city shops goes out of stock because of food for additional 144 people.

Also, unless anime and LNs are lying to me the Japanese still use cash a lot more than western countries do. He can hit up multiple stores in multiple areas and pay cash for camping food, energy bars, jerky, trail mix, instant dried food, canned food, etc.
Once he had teleport he could even do that all across Japan, and it's a good way to launder some of the cash from the dungeon.
