I think My Big Sister Lives In A Fantasy World could make quite a fun anime. It also has the benefit of being one of the earlier ones I read so I can enjoy it not as I won't remember what's going to happen next as clearly.

Looking back, we correctly anticipated Arifureta and Dendrogram anime. Realist not yet, but i still think likely.
NeeChu had and has a number of wishers, but i think it's less likely with it ended.

Already mentioned, but I think The Unwanted Undead Adventurer would make a really good action series if they trim out the pages upon pages of exposition. (I think like 2 things happened last volume?) It's a really cool series if done well.
86 is pretty much on the fast track to getting an anime I think. The publisher pushes the series so much and it's already licensed. I'd bet that an anime will be announced within a year or so.
The Magic in this Other World is Too Far Behind! This would make a cool anime since it mixes the popular Isekai setting with an Urban Fantasy series protagonist. But I worry that the ship is sailing since we've yet to get the next volume and Overlap is kind of bad about continuing series they start publishing. (Looks at Gear Drive which also be a cool series to get adapted considering the kind of fantasy-punk style I get from it with MC's gear ability.)
Fire Girl I'd like to see get an adaptation. It's a cool portal fantasy series where high school students travel to another world called Nutera as part of a high school club. Really good series for the adventure aspect.
Overall, there's just a lot I'd like to see.

I would love Faraway Paladin as an anime.
(Or "My Big Sister Lives in a Fantasy World"... but with an anime original ending. <_<)
I'll third "Unwanted Undead Adventurer", but... instead of trimming out the exposition, they do a Saved-by-the-bell freeze frame every time Rentt starts monologuing about the joys of his toy airship or the adventurer economy. 😈
48 episode anime for a 12-ep budget? 😁 (I really would watch it, though.)

I just finished binge-reading Faraway Paladin last weekend and I agree that it would make a great series. While technically an isekai it's more original than many in that the past life memory fragments supply motivation rather than cheat knowledge, even more so than in the also good Mushoku Tensei: Jobless Reincarnation.
Unwanted Undead - I repeat myself in the prepub threads as badly as the author, pointing out more than once how many volumes a 12-episode run could cover compared to LNs by trimming the redundant restatements. The core of the story is good, even if the pacing is sometimes very slow.
Abilities Average is my favorite of the FUNA series and would make a fun, lighthearted anime even more so than Reincarnated as a Slime did.
So I'm a Spider, So What? would be a good series for fans of darker fantasy shows like Overlord and Goblin Slayer. It would need a high budget to do justice to all of the spider-vs-other-monster battles.

Movie length OVA for the two .5 volumes, then season 2 for the next several volumes, probs with the underground dweller civil war as the climax for single cour, Folsaria arc for two cour.

@smashman42 Or do the two .5's as a single cour. I think there's enough there, especially if you toss in the bookends from volume 7. If you need more material, I think you could add Volume 8, since it's mainly about Maki and Koutarou.

Pretty much any LN that I'm reading, even if the story isn't really suited for anime. But I like just about anything so...yea. As long as it does a good job following the novel and at least an ok job animating it, I'd probably welcome it.

@smashman42 I think it would make more sense and improve the story flow to do the two .5's as a single cour. I think an OVA would be not enough screen time. Given a "regular" episode is about 24 minutes, and take off 4 minutes for the OP, ED, recap and preview and you're left with about 20 minutes. That would be six, maybe five, regular episodes to equal an OVA. Take eight or nine episodes to do the .5's and use the rest to do volume 8.

I would love a second season of Rokka. I thought season one was the best LN anime adaptation I’ve seen.
I also third a desire for Vending Machine.
