- The Alchemist Who Survived Now Dreams of a Quiet City Life
- Der Werwolf: The Annals of Veight
- The Sorcerer’s Receptionist
- Dahlia in Bloom: Crafting a Fresh Start with Magical Tools
- Lazy Dungeon Master
Edit: And I just realized all of these have huge underlying love-relationship storylines.

- Reborn as a Vending Machine (don't know if it's getting one, but it deserves one)
- A Side Character's Love Story
- My Wife Has No Emotion
- Dahlia in Bloom
- The Coppersmith's Bride
- Housekeeping Mage in Another World
- Full Clearing Another World Under a Goddess with Zero Believers
- Roll Over And Die
- The NPCs in this Village Sim Game Must Be Real
- Who Says Warriors Can't be Babes?
- Tearmoon Empire (I know it's getting an adaptation, but let us know when it's premiering already, I have to watch it weekly)

This one has apparently already been announced (premiering in July, according to the Wikipedia page).
A few off the top of my head that haven't been mentioned yet, in no particular order:
- Mixed Bathing in Another Dimension (though this one didn't even get a manga adaptation, so I doubt it ever had the popularity for anyone to even consider making it into an anime. Still one of my favourites, though, especially as one of the first few light novels I picked up when I first caught the bug)
- To Another World... with Land Mines! (the author has already made it into the anime realm with his other series, so I have good hopes for this one.)
- Reborn as a Space Mercenary: I Woke Up Piloting the Strongest Starship!
- Now I'm a Demon Lord! Happily Ever After with Monster Girls in My Dungeon
- Saint? No! I'm Just a Passing Beast Tamer!

- Greatest Magicmaster's Retirement Plan

Don't want to see LDM because that series is just too adult to be properly made into an anime. Well, they did manage to make How NOT to Summon a Demon Lord and not totally botch it, so maybe.
Of course, second seasons of Invaders of the Rokujouma and Campfire Cooking with my Absurd Skill would be appreciated.

Tearmoon has been announced for this fall I believe. -
I Refuse to Be Your enemy will be a good one especially since it is a short finished series.
Conqueror from a dying kingdom will make for a good one as long as you do not make it a low budget commercial like Genius Prince turned out to be.
Altina would be nice.

- Welcome to Japan, Ms. Elf, this is actually my second most wanted adaptation behind Monster Tamer.
- The GM Has Logged into Another World, probably ranks around fourth behind Housekeeping Mage.

I'd say it's only a matter of time with these two, considering they were #2 at Kono Light Novel ga Sugoi in 2022 and 2023, respectively. I think highly-rated novels from there tend to get adaptations eventually. Holy Grail of Eris might happen as well. I'd love for the Deathbound Duke's Daughter to happen eventually, but, let's face it, it just won't. And, honestly, maybe it's even for the better since sometimes no adaptation is better than an awful one.

My anime adaptation wishlist is all over the place. I'm a huge fan of the Death Note manga so that would be at the top of my list. My runner-up would have to be Sunny--it's such a quirky and funny series.
I'd love to see a live-action version of 'Your Name.', especially using all the awesome special effects available these days. 'My Hero Academia' would be cool with a live-action twist. And I wouldn't mind seeing a remake of 'Cowboy Bebop' too.

@novelrosecarbon While a live action Kime no na wa might be interesting, it wasn't "effect heavy" except for one key point.
The comet
That would be awesome to see CGI'ed into reality. Not enough to make me want to see them actually make a movie though.

Wow, almost everything I wanted to say has already been said. All that's left on my list (nowhere near the top, though) is Dungeon Dive: Aim for the Deepest Level. Feels like this one would be a coin flip. If they can portray the MC's mental state well, it'll be a good adaption, even if they can't make the fights look that great. OTOH, if they botch the portrayal of the MC's mental state, no amount of fancy animation can fix it.
The Unwanted Undead Adventurer is already getting an adaptation, but I think it's worth mentioning because it's a rare case where the anime has the potential to surpass the source. Mainly because the source is absurdly pointlessly wordy. I love this series, but it's the only one where I recommend people read the manga first before giving the LNs a try. If there's an anime, it'll be an even better entry point (as long as it isn't awful).
To comment on the ones others have already mentioned, I think that Dahlia in Bloom and Secrets of the Silent Witch are the easy ones. I feel like those two have stories that lend themselves especially well to animation. Ah, and maybe a Dahlia anime can just show us the food instead of describing it in detail. I suppose they'd still have to keep in some of the alcohol discussion... Although I think it's a bit too much, discussions on alcohol feel so integral to the world of Dahlia that losing them would feel wrong.

Lazy Dungeon Master
Lazy Dungeon Master feels like it could be a fun anime, but it could also easily lose all of the intricacies of how the dungeon systems work. It'd probably be a bit like the So I'm a Spider, So What? anime in that all of the "why" of how things work is lost, and you just have to accept that it does. Any strategy or clever moves will feel like arbitrary plot devices that are made up on the spot instead of built up to.

Speaking of, right as I started reading Hell Mode, I thought "Man, there's no way anyone could ever adapt this into a manga or anime. This series can only exist as a light novel". Then, having read some of the manga, I feel validated in thinking that. I can only see the manga as extra companion images to the LN with how little of it they managed to adapt, and an anime will be even worse.

And then there's To Another World... With Land Mines!. On the one hand, I do think this could make for a great anime. On the other hand, my gut's telling me that this will get a really cheap, barely functional anime. The kind of anime that feels like nobody cared when they made it, and that everybody forgets as soon as it's done. I don't know why, but whenever I try to imagine a Land Mines anime, I can vividly see the cheap anime version in my head. It feels almost inevitable that it will both get an anime and that it will be cheap.
